12 1.75" mini cheesecakes

I like this recipe because it doesn't make more cheesecake than we can eat before it goes bad.
1 large crushed graham cracker
1 extra-large egg
1/4 C sugar or splenda
1/4 teaspoon vanilla extract
1 8-oz package Phil cream cheese, soften
2 tablespoons mini choc chips
note: this assumes a mini-muffin pan (1.75" diameter muffins).
preheat oven to 350F. put paper cups in muffin tin & distribute the crushed graham cracker among them. beat eggs, sugar, & vanilla thoroughly then blend in the cheese. fold in chips and spoon into the cups. Bake 15 minutes or until the edges are set & the center is still moist. remove and let cool.
