banana muffins, updated

An updated version of this.
1 C flour
1 C whole-wheat flour
1 T baking powder
1 t cinnamon
.5 t nutmeg.
.66 C brown sugar
2 ripe banana, mashed + milk to 2 C
.66 C canola oil
1 egg
.5 t vanilla
Muffin pans & cooking spray
Preheat oven to 400F. If you have a blender with C markings, be glad. Skin the bananas and toss it in. Add milk until you have 2C of bananas & milk (yes you can also do this in a measuring cup) then add the oil, egg, sugar, and vanilla. Blend.
In a largish mixing bowl, stir the flours, baking powder, cinnamon & nutmeg. Add the wet ingredients and mix briefly - you want things to get mixed together but not too much.
Prep a muffin pan with cooking spray. Spoon in the batter (a .3 or .5 measuring cup works well for this step) and bake for 18-20 minutes. Check with a toothpick :) Makes 12 muffins.
